Similar story here. I use one class for each weapon type. Mine are named:
Assault
MP
LMG
Shotgun
Sniper
Interestingly, in the German version, SMGs are called - translated literally - "Machine Pistols". I suppose that's because there's no expression more similar to "Sub-Machine Gun" in my language .

What I used to have:

Patient Hunter:
S.A.S.
Rain of Fury (I think it was this)

And I can't remember the other two..these were on the 360, and I'm on the PC now. I just name em according to the weapon now, but sometimes put stuff like Silencio and Granada! after them to indicate the attachment since I usually have copied classes except with different attachments.

Dont use shotguns, and if i wanted to id do the standard class.

I always use Overkill, so i name my classes by their primary, and secondary weapons. Currently mines are named

P90-M60
AK47u-RPD
MP5-SAW
Peeg (My mates class and the nickname he hates)
Free (I always keep this class free and change it as and when i feel like it between games.

Splinter cell - (my stealth class)
Guhdragunov - (well they call the desert eagle the deagle, so as a joke i started calling the golden desert eagle the gdeagle [pronounced guhdeagle], so the golden dragonuv is the guhdragonuv)
Scoped missile launcher - (the barrett .50 cal, its a joke about its ridiculous power.)
Bloody puke - (M40A3, because with red tiger it looks like bloody puke.)
MP5 - (I ran out of creative names)
The Ultimate N00b - (class i made with M16 and matrydom and all the stuff people complain about cuz they suck, just to piss em off when they get annoying)

i name my guns. my mp5 was called trevor but then i prestiged so it's now trevor jr. m21 is colin and ak-47 is ahkmed. me and trevor jr always discuss tatics.
